I discovered at an early age that I had food allergies, however it took me years to narrow them down to preservatives in food such as MonoSodium Glutomate. As a result I have learnt to cook everything from fresh. The result is completely fresh food from ChilliCulture – guaranteed!
Growing up with an Italian father and an English mother I got the taste for good home cooked food from an early age. Every summer when we went to Italy I used to sit and watch my Italian Grandmother as she made her daily batch of pasta. She inspired me to want to cook.
After University, when I lived in Islington we regularly ate at the various Mexican restaurants and this was where my love for Mexican food started. Since the early days I have worked hard to create the perfect guacamole and pulled pork. I believe that using local produce is the key to success combined with time and passion. Nothing beats a tortilla piled high with pulled pork, sour cream, grated cheese and guacamole. I can’t wait to start cooking with Tom.
